Tasuku Suzuki ed60f252ee Use wildcard for Zephyr VERSION files in license checks 
Update REUSE.toml and xtask license header check to use wildcards
for demos/*/zephyr/VERSION files instead of only matching printerdemo.
This ensures home-automation and future Zephyr demos pass CI.
